Ammees curry paste originates from the 'Tobah Tek Singh' district (40 miles from Faisalabad) within the Punjab region of Pakistan. The recipe was created by my grandmother over 50 years ago making it authentic and unique.
My grandfather was a traditional Pakistani husband in that he expected a freshly cooked meal twice a day. To help in cooking without compromising on taste and freshness she developed a paste encapsulating all the fresh ingredients required to make a curry into a concentrated paste.
My mother took, along with her new husband (my father), the recipes she had learnt from her Mother to the UK. Whilst living as a Pakistani in her new country, she learnt to adapt these recipes to suit the local ingredients and our family's tastes, collected new recipes and discovered new ways of serving her old favourites. She has written down her recipes and passed on this knowledge to the rest of our family and myself.
